Creole Celeriac and Potato Mash

Why not make a healthier version of mashed potatoes to help cut through holiday meal heaviness? The bonus: they taste great!

Inspired by the tried-and-true holiday classic, mashed potatoes. This mash will add a chef-worthy touch to your table and we don’t think anyone will miss the plain ole potatoes.

YIELD 6-8 servings
PREP TIME 20 minutes
COOK TIME 15 minutes

2 pounds celeriac (aka celery root), peeled and cubed
1 large russet potato, peeled and cubed
3 cups low-sodium chicken stock or water
3 tablespoons plain greek yogurt
1 tablespoon creole mustard
1 tablespoon chopped chives (reserve some for garnish)
ground cayenne to taste (optional)
salt and pepper to taste

1. Cook the celeriac and potato in a pot of boiling salted water until fork-tender, about 12–15 minutes. Drain well, then return to the pot.

2. Add the remaining ingredients and mash with a potato masher to your desired consistency. Season with salt and pepper.

3. Serve hot, garnished with chives.
